One Maker, Many Latitudes
Bonnat's 24-bar catalog reads like a map held up to the light.
By Rami
The pattern is the point. Bonnat's archive spans Brazil, Colombia, Haiti, Trinidad, Uganda, the Philippines, and Peru, among others, and the house treats each origin as a distinct argument rather than a variation on a theme. Twenty-four bars, origins spread across four continents, one percentage appearing again and again: 75%. That consistency of cacao content across wildly different growing conditions is a quiet thesis. It says the chocolate should carry the place, not the recipe.

Seven bars have been reviewed by members so far, with the Dos Cielos Colombia Milk 65% sitting at the top of that early count. The rest of the catalog is open territory. For a member working through the archive methodically, Bonnat rewards that approach more than most. Each bar is a different answer to the same question, and the question is what cacao actually tastes like when the land it grew in is allowed to speak.
